Because of its high-calorie and high-fat content, this vegetable side dish may not be a recipe that you would want to enjoy on a regular basis, but it certainly makes a superb change of pace on those occasions when you want to indulge in truly decadent foods. This spinach dish includes chopped onion and garlic sauteed in butter and is then combined with heavy cream and, of course, the spinach. A dusting of nutmeg provides a tasty garnish.
ingredients
- 2 10-oz. bags spinach (large stems removed) or two 10-oz. pkg. frozen chopped spinach, thawed
- 1/2 cup chopped onion
- 2 to 3 cloves garlic, minced
- 2 Tbsp. butter
- 1 cup whipping cream
- 1/2 tsp. freshly ground black pepper
- 1/4 tsp. salt
- 1/4 tsp. ground nutmeg

- In a large pot of rapidly boiling salted water cook fresh spinach (if using) for 1 minute. Drain well, squeezing out excess liquid. Pat dry with paper towels. Snip spinach with kitchen shears to coarsely chop; set aside. If using frozen spinach, drain well, squeezing out excess liquid.
